Off Topic: Holiday Recipes

I've had some things on my plate lately; and I'm battling a cold, writer's block (which probably doesn't really exist but try telling my word count that), and stress. I've read a couple books in the last two weeks (a lot slower than usual, just let me say), and neither of them was so brilliant that I wanted to rave about them to you guys. I'm sorry. They weren't bad, just okay, and I just couldn't get up enough enthusiasm to write a blog about either of them. Or both of them.

But I did make some smoked salmon dip last night. Now that I can rave about.

I love those little crisp breads with a bit of salmon, a bit of horseradish and sour cream, and a sprinkle of onion. Pop it in your mouth and it's like a little Russian davai goolyat!

So here is the recipe:

8 oz cream cheese
1/2 cup sour cream
1 Tablespoon lemon juice
4 oz smoked salmon, minced
1/4 cup red onion, minced
2 Tablespoons capers
1 teaspoon dill weed (or to taste, I just sprinkled it in)
1 Tablespoon horseradish

Mix up really really good. Serve on crackers. Tastes better if you let it hang out in the fridge for a while and do its thing, but I have eaten it straight out of the bowl just fine.

So today instead of books, we're going to talk recipes. What is your go to recipe for the season, or what is your favorite snack to eat (with recipe link)?

You lost me at cream cheese.

The only thing I make is Buckeyes and we'll be doing that this coming weekend. Literally the simplest thing ever. I use the recipe Toni Blake shared last Christmas, which is melted peanut butter chips with a can of white frosting dipped in melted chocolate. H-E-A-V-E-N.

Nah, that's okay. I'm going to have to explain to Weight Watchers at the weigh in this week. "Of course, I practiced portion control!"

I mean, the recipe I shared serves 1 right?

I was introduced to this quick to make snack by a neighbor about 3-4 years ago and now I bring it everywhere:

1 bag of Rolos
Square pretzels
Whole Pecans

Preheat the oven to 250 degrees. You arrange as many square pretzels on a cookie sheet as will fit and place a Rolo on top of each one. You then place the cookie sheet in the oven for about 2-3 minutes - you want the Rolos soft but not melted all over the pan. Take out the cookie sheet and press a pecan on top of the melted Rolo. Put the cookie sheet in the refrigerator for a couple of hours (best over night).

These are really, really addicting. And since my son doesn't like pecans I just press another pretzel on top of some instead of the pecan. It's a great sweet/salty treat!

Oooh, those are like quick and dirty turtles. *LOL* YUM! Love it! And you'll have to let me know if he likes it. I had a writing partner several years ago, Kat Cody, who made this recipe--and I just fell in love with it.

OH! I love recipe shares. :)

Lemme see. I make all sorts of stuff.

How about fudge? I make fudge every year and I package it up and give it as gifts for my hubby's work.

I use the old school Fantasy Fudge recipe. They've changed it, apparently, since this one. I don't like the new recipe. So, here's the old one.

Fantasy Fudge
3 cup granulated sugar
3/4 cup margarine (I use Imperial)
2/3 cup evaporated milk (NOT condensed)
1 12oz bag semi sweet chocolate chips
1 7oz jar of marshmallow fluff
1 tsp of vanilla extract

Butter/margarine up the bottom and sides of a 13x9 pan. Throw sugar, margarine, and milk into a sauce pan (2 1/2 quart). Stir constantly as it all melts together and until it reaches a rolling boil. Once you reach a rolling boil, start timer and boil for 5 mins. Remove from heat. Add choc chips, fluff, and vanilla. Stir until all melted. Pour into prepared pan. Allow to set.

Couple notes. The key here is in the details. Use a good quality margarine (I have had great success with Imperial). Good quality chips and real vanilla extract, not imitation.

Also, I add some decorations before it sets, colored sugar or the little candy balls or whatever you like. They stick once it sets and it fancies it up.

And! Bonus! This really works out those arm muscles. But totally worth all that stirring.

Yum. I can't wait to start making this. Sooo good.

PS, for boiling time. Make sure you wait until it's really really boiling to start the timer, not just at the first sign of bubbles around the side.

Oooh, fudge!! YUM! Don't you love how they make the recipes more and more "less cook intensive" for those of us who cannot cook so much as water?

And I'm laughing about the "crap" mistake. *LOL* I'm not sure; I haven't tried it with crab, but I can't see how it would be bad because the cream cheese and other stuff tastes fine without the salmon anyway--so you can probably do whatever you want. Though the smokiness comes through and that's nice on the dip.

Sabrina, Oreo Truffles used to be my THING. They still kinda are; they're so ridiculously easy. I love how you avoided sharing FAMILY recipes. Nice. *LOL* And of course, we need more drink recipes around here. I think the buttered toffee might knock out my cold!

crap-filled dip . . . hmmm

My favorite holiday party snack is not really holiday-ish or a dessert, but I make it for every party anyway.



Slice jalapenos down the middle and remove seeds/membrane; lay them out like little boats

Mix shredded sharp cheddar with a bit of sour cream, cream cheese, salt/pepper/garlic and shove as much as possible into each jalapeno boat

wrap with a slice of un-cooked bacon and secure with toothpick

Bake for 25 minutes at 375, then broil on high for another 3-4 minutes to crisp the bacon.

(can anyone tell I tend to cook off guess work more than recipes? Which might explain why yet another dinner was destroyed last night . . . lol)

I have one like that Hal, but I just load up the boats with cream cheese and tie the bacon around it and bake...addictive things. I'll eat 'em for supper if I can. *LOL*

Even if I follow a recipe, things never turn out right. So I don't even bother anymore unless I KNOW I can do it. Meaning, it's so easy a child can do it.

Okay, I gotta get in the car and drive to my mom's house and I CANNOT stop laughing at the crap dip!!! My eyes are watering!

I also make a date, water chestnut and bacon thingy. I think there's a fancy name for it but I can't remember it. You put a water chestnut on a date, wrap a piece of bacon around it and stick a toothpick through it to hold it all together. Bake for 20-30 minutes at 350 degrees. I love this - the salty/sweet combo again! LOL

My son ate these and didn't know until last year that they were dates. Won't eat them now! UGH! Teenagers!!!!

Aren't they called "Angels on Horseback" or something? I haven't had one, I should try them. I have some dates hanging around in my cupboard. Just need the chestnuts.

I don't like dates either, necessarily, but I'd give them a whirl.

I don't like raisins, but the McDonald's oatmeal is actually tasty, even with them in it!

This is how crazy this topic is to me.

WHO has dates and chestnuts just sitting around their house? WHY would you happen to buy these things? In fact, if you put six food items in front of me and told me one was a chestnut and one was a date, there's a good chance I couldn't pick them out.

I'm making the Mom's uber fantastic cinnamon rolls for my gifts this year, but don't have the recipe handy... And I already sent Marn my fav holiday cookie recipe...

But! We do have a party solid that the niece brings every year... sliced salami, thin. Cream cheese and...holler peppers. She does some mild and some hot. You spread a dab of cream cheese on a salami slice, wrap it around a pepper, skewer with a toothpick... DIVINE! These are horribly addictive and she never has any to take home.

Uh...yeah, not too fond of crap cakes. And I'm sorta with ya, Terri. If I walked into my house and found dates and chestnuts I'd figure I'd been invaded by a hoard of squirrels who stole my credit cards and ordered a stash for the winter...

I make a dip that sounds like a variation of the salmon recipe but without the red onions and with chipped beef instead of salmon. We need PJ here for cookie recipes. Hers are wonderful.

Ter, this is my aunt’s recipe for bourbon balls. It’s no-cook and easy. You can substitute rum if you prefer rum balls, or you can use apple juice for a teetotalers’ version. (I used to call it the Baptist version, but I went to a party last weekend hosted and heavily attended by Baptists where beer and wine flowed freely.) :)

1/2 cup milk chocolate chips
2 cups vanilla wafer crumbs
1-1/2 cups powdered sugar
1 cup finely chopped cashews
1/4 cup cocoa
1/3 cup bourbon
1/4 cup light corn syrup
More powdered sugar

Melt the chocolate chips in microwave (50% power for 2 minutes). Remove and stir until melted.

Combine wafer crumbs, powdered sugar, cashews, and cocoa.

Add the melted chocolate, bourbon, and corn syrup and mix until well blended. (The dough should be firm.)

Cover and refrigerate dough for 2-3 hours.
Shape into small balls and roll in powdered sugar to coat.

Store at room temperature. (Use an air-tight container. Best served several days later.)

Those sound great and easy, Janga. I'd probably like the bourbon better than rum. But Amaretto would be even better. I may have to try this. And we do need PJ!

Irish, I saw the pretzel-Rollo dish on FB yesterday with M & Ms instead of pecans. They called them Reindeer Noses. Cute. Maybe your son would eat the M & Ms.

I also saw reindeer heads made from slice-and- bake cookie dough shaped into triangles, frosted white, with pretzels for horns, gumdrop noses, and M & M eyes. Also cute.

Another niece did something with small peppermint patties...like the rollo recipe. I guess it's the new trend. Cheater candy. Making candy from candy.

Which works for me!

The M&M option sounds fab. Not a nut person...

I'm another one who wouldn't know a fig from a date and I don't like water chestnuts in anything. So, I'm out on that one.

I do like bacon though. Actually, I enjoy the swine in pretty much any of its many tasty manifestations.

I've made the reindeer cookies with the peanut butter cookie dough. They turn out cute. And I like peanut butter cookies so that's a win.

I'm just laughing at Terri's confusion. *LOL* And I do happen to have water chestnuts AND dates in my house, thank you very much. But those aren't even the weirdest things I have.

Rumaki? That sounds cool. The things I was thinking about--I realized later in the car--are scallops on chestnuts with bacon and baked. Those are the angels (or archangels)--if you do oysters instead of scallops, it's called Devils on Horseback. Haven't had either, but I love the names so much I really want to. *LOL*
